Veggie Burgers with Asian Slaw

So I have been thinking about what to cook for my very first post and I decided, that it doesn’t matter what I cook. Mainly because if I’m lucky and I mean very lucky, there will be two people that will read this.

I’m creating some Asian inspired Veggie burger with a slaw. Veggie burger, you say? As much as I love a good ol‘ fashioned beef burger, I think veggie burgers are so under-rated. I’m going to give you my favourite recipe for this veggie burger, but you can get as creative as you like. Asia is a massive continent, so you will have so many ingredients at your disposal. Endless variations!

Make Japanese style veggie burgers buy using sake, mirin or miso paste. Thai inspired veggie burgers with lemongrass and red curry paste or even veggie burgers with one of India’s favourite spice mixes, Garam Masala. (More on how to make your own Garam Masala later)

So here it is, my pioneer post. Epic Asian inspired veggie burgers.

  1. Put all the ingredients for the veggie patties in a food processor

2. Pulse until it all comes together

3. Form into a burger the same size as your bun

4. Shallow fry at a medium heat until golden brown. Be careful not to burn.

5. Mix all the ingredients for the slaw dressing, then add it to the rest of the slaw ingredients.

6. Time to assemble your burger. I like to lightly toast my buns but that it entirely up to you. Spread with mayo and sriracha, add the pattie and top with slaw.

Now this was a damn good tasting veggie burger.

Ingredients
  

Veggie Burger Patties

  • 1 tin chickpeas drained and rinsed
  • 1 carrot grated
  • 2 spring onions
  • 1 tbsp ginger finely grated
  • 2 garlic cloves roughly chopped
  • 3 tbsp sesame seeds
  • 1 tsp sesame oil
  • 1 tbsp sake
  • 1 tsp mirin
  • 1 tbsp light soy sauce
  • 25 grams panko breadcrumbs or any other breadcrumbs
  • salt and pepper to taste
  • 1 tbsp olive oil

Asian Slaw

  • 1/2 cabbage
  • 1 carrot grated
  • 1 bunch cilantro
  • 1 green onion thinly sliced

Slaw Dressing

  • 1/2 cup rice wine vinegar
  • 1 tbsp mirin
  • 1 tbsp sesame oil
  • 1 tbsp sesame seeds
  • salt and pepper to taste

Burger Buns

  • Buns of your choosing
  • mayonaise
  • sriracha

Instructions
 

  • Combine all the ingredients for the patties in a food processor and pule until you get your desired consistency.
  • Make the patties about the same size as your buns.
  • Fry with a tbsp of oil at a medium heat until golden brown.
  • Mix all the ingredients for the slaw dressing. Be sure to taste for seasoning and adjust to suit your taste.
  • Mix with the slaw.
  • Lightly toast burger bun and spread on mayonnaise and sriracha.
  • Add burger to the bun and top with slaw.
  • Enjoy

Notes

Swap out ingredients and make this burger your own. 
Use black beans instead of chickpeas, if you wish.
Think of a country and think what ingredients make that country unique.
Always taste your food as you cook.
